Dr. Stig Bengmark, a professor of surgery at Lund University, Sweden says the thin layer of mucus covering the lining of the large intestine forms a barrier to keep toxins and infectious agents such as E coli, from infiltrating the body to cause disease. This mucus layer must be kept intact and healthy. A unique health food to help do this is oats. Oat fibre promotes mucus functioning and oats are full of phospholipids needed to form the mucus layer. “Oats have 100 times more phospholipids than any other food,” Bengmark said.
